Gond Katira rose milk is a refreshing drink that combines chilled milk, fragrant rose syrup, and soft, jelly-like gond katira. Its attractive colour, delicate flavour, and interesting texture make it a popular choice for warm days, festive gatherings, or an occasional homemade treat.

Also known as tragacanth gum, gond katira is a natural edible gum that expands considerably after being soaked in water. Once properly soaked, it develops a soft, translucent, jelly-like consistency that blends easily into milk-based drinks.

The recipe itself is simple, but gond katira needs to be prepared several hours in advance. Here is a complete step-by-step guide.

Ingredients

This recipe makes approximately four servings.

  • 2 teaspoons food-grade gond katira

  • 2 cups water for soaking

  • 4 cups chilled milk

  • 6 to 8 tablespoons rose syrup, or according to taste

  • 1 to 2 tablespoons sugar, optional

  • ¼ teaspoon cardamom powder, optional

  • Ice cubes as required

  • Chopped almonds or pistachios for garnishing

  • Dried edible rose petals for garnishing, optional

Step 1: Clean the Gond Katira

Place the dry gond katira crystals in a bowl and check them carefully for any visible impurities. Rinse them briefly with clean water.

Make sure you use food-grade gond katira intended for consumption. Do not confuse it with the regular edible gond commonly roasted and used in winter laddoos, as the two ingredients behave differently in water.

Step 2: Soak It Overnight

Add approximately two cups of clean drinking water to the rinsed gond katira. Use a large bowl because the crystals expand significantly while soaking.

Cover the bowl and leave it undisturbed for around eight to nine hours or overnight. By the next morning, the small crystals should have absorbed the water and changed into a fluffy, jelly-like mixture.

If some pieces remain hard, allow them to soak for a little longer. Do not consume dry or incompletely soaked gond katira.

Step 3: Drain the Excess Water

Transfer the bloomed gond katira to a fine strainer. Drain any excess water and rinse the jelly gently if needed.

The soaked mixture should be soft and free from hard pieces. Two teaspoons of dry gond katira can produce a surprisingly large amount after soaking, so avoid using too much in the beginning.

Keep the prepared jelly refrigerated while you make the rose milk.

Step 4: Prepare the Rose Milk

Pour the chilled milk into a large jug. Add six tablespoons of rose syrup and stir well.

Taste the mixture before adding more syrup, as different products can vary in sweetness and flavour intensity. If you prefer a stronger rose flavour, add another tablespoon or two.

You may also add cardamom powder for a subtle aromatic note. If the rose syrup does not provide enough sweetness, add a little sugar and stir until it dissolves completely.

Step 5: Add the Soaked Gond Katira

Add three to four tablespoons of soaked gond katira to each serving glass. Pour the prepared rose milk over it and stir gently.

The soft jelly will spread throughout the drink, giving it a distinctive texture without overpowering the flavour of the milk and rose syrup.

Step 6: Garnish and Serve

Add a few ice cubes if you want the drink extra cold. Garnish with chopped almonds, pistachios, or dried edible rose petals.

Serve the gond katira rose milk immediately while it is chilled and fresh. Give it a quick stir before drinking so the jelly is distributed evenly.

Easy Variations to Try

The basic recipe can be adjusted in several ways:

Use Plant-Based Milk

Replace dairy milk with chilled almond milk, oat milk, or another plant-based beverage. Choose an unsweetened variety if you want better control over the total sweetness.

Add Sabja Seeds

Soak sabja seeds separately and add a small spoonful to each glass. Their texture pairs well with the soft gond katira jelly.

Turn It into a Falooda-Style Drink

Add cooked falooda sev, soaked basil seeds, and a small scoop of vanilla or rose ice cream for a richer dessert-style beverage.

Make a Lower-Sugar Version

Use less rose syrup and add a few drops of food-grade rose water for aroma. Remember that rose water is generally more concentrated than rose syrup, so only a small amount is needed.

Helpful Preparation Tips

  • Always soak gond katira before adding it to a drink.

  • Use a large bowl because it expands considerably.

  • Start with a small quantity of dry crystals.

  • Use chilled milk for the best flavour and texture.

  • Adjust the rose syrup gradually rather than adding too much at once.

  • Keep the soaked jelly refrigerated in a clean, covered container.

  • Prepare only the amount you expect to use within a short period.

  • Discard the mixture if it develops an unusual smell, colour, or appearance.

Final Thoughts

Making gond katira rose milk at home requires very little active preparation. The main step is soaking the edible gum properly until it develops its characteristic jelly-like texture. Once it is ready, simply combine it with chilled rose milk and your preferred garnishes.

With its gentle rose aroma, creamy base, and distinctive texture, this homemade drink offers an enjoyable way to use gond katira. Prepare it for a summer afternoon, serve it to guests, or customise it with plant-based milk, sabja seeds, nuts, or falooda ingredients to create your own version.
